Beetroots

The taproot ranges in shape from globular to long and tapered. Skin and flesh colours are usually dark purplish red, though some are nearly white or orange. Beetroots should be smooth, firm, and unblemished; medium-sized specimens are the most tender.

Beetroot, also known as Beta vulgaris, is a root vegetable that is part of the Conditiva Group of plants. It’s a biennial plant that’s usually grown as an annual for its leaves and bulbous roots. Beetroot is native to the Mediterranean and evolved from the wild sea beet, which can be found along coastlines from India to Britain. The plant’s botanical name, Beta, comes from the Celtic word bett, which means “red”. 

Beetroot plants can grow to be 1–2 meters (3.3–6.6 ft) tall and have oval leaves that are 20–40 cm (7.9–15.7 in) long. The leaves are arranged alternately on the stem and have a red petiole (leaf stem) and midrib. The roots are usually red, purple, white, or golden in color and can be round or cylindrical. Beetroot plants also produce sessile green flowers.
